Zucchini Pizza


Hello again Titus 2 sisters! 


Yes, I'm back again with another zucchini recipe! 


Base... 

3 cups zucchini, grated

3 eggs

1/3 cup flour

1/2 tsp salt


Toppings... 

2 cup cheese, grated 

2 tomatoes, diced

1/2 cup green capsicum/pepper

1/2 onion, finely chopped

1 tsp oregano

1 tsp basil

3 tblsp Parmesan cheese (optional)


You can use whatever toppings you like really:-) (I didn't use them all here either, just what I had.) 


Mix together base ingredients, and spread on a lined tray. Bake at 180C/350F until set and lightly golden (about 10 minutes). (I doubled the recipe here to make two pizzas.



Add toppings... 



Bake until cheese is melted.

Quinoa with Vegetables


Hello Titus 2 sisters! 


Today I am sharing this recipe with you. 


1.5 cups quinoa, (cooked according to directions and salted) 

3 large onions, chopped

1 zucchini, sliced

2 cups cabbage, shredded

6 Roma (or handful of cherry) tomatoes, chopped

Basil leaves, chopped

(garlic powder, optional) 

Fry onions until golden. Add cabbage and zucchini and cook until soft. Add cooked quinioa, tomatoes, and basil and cook for a few minutes. 

Serve and thank the Lord for good healthy foods He provides!

Zucchini Boats


Greetings Titus 2 sisters! 


Here's yet another zucchini recipe! 


You can practically make the filling any way you like it as long as it's reasonably dry and not too wet. This one I made up for here but there's many different ways you can do it of course. 


5 small zucchinis

500g beef mince/ground (or whatever you like) 

1 large onion finely chopped 

4 garlic cloves 

Half red capsicum/pepper

5 tbsp tomato paste

Cheese, grated

Basil and salt (to taste) 


Slice the zucchinis lengthwise and scoop out the seed area. Place in a large baking dish. 

Keep the zucchini flesh aside and chop roughly. 

Fry onion till soft then add garlic, capsicum, zucchini flesh, and meat. Fry until the meat is cooked through. Add the tomato paste and basil. Let it simmer to thicken if it is too liquid. 

Fill the boats with the meat mixture and then top with grated cheese. 



Bake in a moderate oven for about half an hour or until zucchini is soft.

Zucchini Crumble/Crisp


Hello Titus 2 sisters! 


Here's a zucchini crumble recipe:-) (tastes like apple crumble). A sister first mentioned it to me awhile ago and I'm finally getting to sharing it here. It's only the second time I have made it though. 

I would call this a rare treat myself due to the amount of sweetener needed to help it work but all depends on people's preferences I guess. The lemon juice helps make the zucchini taste like apple. 


8 cups zucchini peeled, halved lengthwise and sliced thinly

⅓ cup lemon juice

½ cup sugar (or stevia) 

1 tsp ground nutmeg

2 tsp ground cinnamon

Cornflour 


Topping

1 cup brown sugar packed, (or stevia substitute) 

½ cup butter (or coconut oil) 

1 cup all-purpose flour (or almond flour which I used) 

1 cup oats 


(note on the zucchini...use small ones. Not sure if the giant ones would work. You'd have to get out all the seeds if you wanted to try.) 


To make sure the zucchini ends up well cooked in the end, I cooked it in a saucepan for about 15 minutes first, with the sugar (or stevia), lemon juice, nutmeg, and cinnamon. 

Then I needed 2 tbsp of cornflour to thicken it up at the end of cooking. Depends how juicy your zucchinis are. Just mix the cornflour in a tiny bit of water before adding. 


Make the crumble topping by adding all ingredients together and using your fingers to incorporate the butter (or coconut oil). 


Place zucchini into a dish and top with the crumbs... 

Bake in a moderate oven until top is golden. (20-30 minutes)

Chicken Zucchini Curry


Hello Titus 2 sisters! 

Time to share another zucchini recipe here. This one I just made up on the spot tonight. (I think it needed more flavour so I upped some ingredient amounts here but will try it myself another time:-) and will test it more.)

This is a large recipe that should serve 6-8 I believe. 

2 large onions, chopped

6-8 garlic cloves, minced  

1kg chicken thighs or breast, cut into smaller pieces 

Handful of basil leaves, roughly chopped

2 zucchini, cut into bite sized pieces 

1 can (400ml) coconut milk (or cream)  

1 cup cherry tomatoes

1 tsp turmeric

1 tsp ground ginger

2 tsp salt (approx) 


Fry onion in a large pot until soft and a little golden. Add garlic and cook for a few minutes. Add chicken and fry until cooked through. Add zucchini and basil. Cook for about 5 minutes. Then add the coconut milk, cherry tomatoes, turmeric, ginger and salt. Cook for a further 5 minutes or until the zucchini is tender. (can add some cornflour to thicken it at the end if you like.) 

Serve (on rice or quinoa) and thank the Lord for providing daily food again!

Simple Zucchini Bread


Hello my Titus 2 sisters!


I'm sharing a regular zucchini bread recipe here. I like simple recipes with not a huge list of ingredients too:-) 




1 1/2 cups flour

3/4 cups sugar

2 1/4 tsp baking powder

1/2 tsp salt

eggs

1/3 cup oil (any kind you like) 

1 cup zucchini, grated


Combine all ingredients and bake in a 180C (355F) oven in a loaf tin for about 50 minutes. 



Good extra food blessings the Lord allows us to have...above simple bare basics. 

In every thing give thanks: for this is the will of God in Christ Jesus concerning you.

Zucchini & Bean Soup


Greetings Titus 2 sisters! 


Sharing another zucchini soup recipe for you. 


1 leek, sliced (or onion) 

1 carrot, diced

2 celery stalks, diced

4 garlic cloves, finely chopped

400 g can beans

500g zucchini, diced 

5 cups stock

Salt


Optional... 

Juice of half a lemon

Fresh basil leaves


(I used leek scapes instead of the celery here.) 


Fry leek, carrot, and celery in oil... 

(Titus 2 tip...and it's just something I learned recently so maybe you all know already but it's how to make regular pans not stick so easily. It's important to heat the empty pan really hot and then add ample oil and then heat that hot before adding anything. Then you get a pan that is almost non stick...which goes without saying is a great blessing! Doesn't work for everything but it helps for most things! Just sharing cuz I didn't know until recently:-) 


Then add the garlic and cook for a few more minutes. Then add zucchini, stock, and beans and cook until the zucchini is tender. (If using, add the optional items at the end.) 


Serve and thank the Lord! 

Indeed praise Him for providing good healthy foods!

Cheesy Zucchini Bites


Hello Proverbs 31 godly women!


Here's yet another zucchini recipe that I have made several times.


1/4 cup onion, finely chopped 

1 cup breadcrumbs

1 cup cheese, grated

3 cups zucchini, grated (and excess water squeezed out) 

2 eggs

Salt and pepper


Combine all ingredients... 


And shape and flatten and place onto baking sheets... 

Bake until golden in a hot oven (200C/400F).

Chocolate Zucchini Bread


Greetings Titus 2 sisters! 


Today I'm sharing a chocolate zucchini bread recipe. 



2.5 cups almond flour

1/2 cup cacao powder

1 tsp baking soda

1/2 tsp salt

4 tblsp coconut oil, melted 

4 eggs

1/2 cup honey

1 1/2 cup zucchini, grated

1/2 tsp vanilla 


Combine all ingredients...



Divide between two small loaf tins... 


And bake in moderate oven for about 35 minutes.

Simple Zucchini Soup

 


Greetings Titus 2 sisters!

Today I'm sharing a zucchini soup recipe that I like to make. It's one of the things that use a lot of zucchini which is often what you want to do when you have super fruitful plants!



I'm not sharing actual measurements as soups are so customizable and if you've had any experience with them you can just wing it:-)

I use mostly zucchini but add a few potatoes and an onion and some garlic and some stock or broth or just salt and add water to cover about three quarters of the veggies.

You don't have to worry about chopping the vegetables that small as you'll be blending it smooth later.




Just cook until soft and then blend. (While it may add some extra flavour to fry the onion first I don't bother most times.)

Buckwheat Soup


Greetings godly sisters! 


Today I want to share a simple soup recipe. I got this idea from a sister when I was in Canada...thank you sister:-) Thankful to the Lord for good things to cook and eat to keep us going serving Him! 

5 eggs

1 cup buckwheat

About 3 litres of water or stock/broth 

Salt to taste 

You can also add other things like onion, potato, chicken, zucchini, parsley, garlic etc like I did today. You know how custamizable soups are for the most part:-) 


Soak buckwheat in beaten eggs for an hour or so before cooking it. 


Then add to the boiling water/broth. Buckwheat needs about 15 minutes cooking until soft. 

It's really that simple! 


Enjoy the good nourishing food the Lord provides!

Recipe - Zucchini Stirfry

 


I'm sharing a quick recipe idea for my keeper at home sisters. I'll leave most of the quantities for you cooks to decide. 

Fry chopped onion and chopped meat until cooked. We use bacon but you could use chicken or whatever, or omit meat altogether. 

Add sliced zucchini and sliced carrot and cook. Then add approximately 1 tsp cumin powder, 1 Tbsp soy sauce, and 1 Tbsp honey

Optional extras: 

garlic

capsicum

mushroooms

or any other veggies really

I'm sure some of you cooks know how to experiment with this and that. 

I added leftover rice into this one in the pic.

Recipe - Zucchini Slice

Just thought I'd quickly share this well used recipe here. 

It originally was from a recipe book...but it's in my head now so I'll just share that. 

I'm sure there are many similar recipes out there...but we haven't felt the need to change this one at all. 

Zucchini Slice

375g (13oz) zucchini, grated

1 cup of cheddar cheese, grated

5 eggs

Half cup of olive oil

1 large onion, chopped

A bit of bacon, chopped

1 cup of self raising flour (or flour and 2 tsp baking powder) 

Salt (half teaspoon) 

Stir it all together, pour into a baking dish, and bake in a moderate oven for about half hour. One word of advice...always put the flour in last.
