Chicken Zucchini Curry


Hello Titus 2 sisters! 

Time to share another zucchini recipe here. This one I just made up on the spot tonight. (I think it needed more flavour so I upped some ingredient amounts here but will try it myself another time:-) and will test it more.)

This is a large recipe that should serve 6-8 I believe. 

2 large onions, chopped

6-8 garlic cloves, minced  

1kg chicken thighs or breast, cut into smaller pieces 

Handful of basil leaves, roughly chopped

2 zucchini, cut into bite sized pieces 

1 can (400ml) coconut milk (or cream)  

1 cup cherry tomatoes

1 tsp turmeric

1 tsp ground ginger

2 tsp salt (approx) 


Fry onion in a large pot until soft and a little golden. Add garlic and cook for a few minutes. Add chicken and fry until cooked through. Add zucchini and basil. Cook for about 5 minutes. Then add the coconut milk, cherry tomatoes, turmeric, ginger and salt. Cook for a further 5 minutes or until the zucchini is tender. (can add some cornflour to thicken it at the end if you like.) 

Serve (on rice or quinoa) and thank the Lord for providing daily food again!
