Pumpkin Muffins


Hello Titus 2 sisters! 

Here's another pumpkin recipe! Hopefully it's useful or at least I can not forget what I tried next season! 

1 ½ cups oats
1 ½ tsp pumpkin spice mix
1 tsp baking powder
½ tsp baking soda
½ tsp salt
2 eggs
1 cup pumpkin puree
½ cup brown sugar (or maple syrup, honey, or stevia etc)
¼ cup oil (any kind) 
¼ cup milk (or non-dairy milk) 
1 tsp vanilla extract

Blend oats to make flour in a food processor or blender (or use pre-made oat flour about 1 1/4 cups of it). In a bowl, mix together dry ingredients and then add the wet. Bake in muffin trays for about 25 minutes in a preheated moderate oven (180C/350F).

Pumpkin Fudge


Greetings sisters! 

Yes I'm back with yet another pumpkin recipe! This is a delicious and healthy fudge recipe. 

1/2 cup cooked pumpkin (pureed) 
1/2 cup coconut oil
1/2 cup cashew butter (or any nut butter) 
1/4 cup maple syrup
1 1/2 teaspoons pumpkin spice mix

In a small saucepan, combine all ingredients. Heat gently over low to medium heat, whisking continuously until just smooth (when the coconut oil is melted). Do not overheat. 

Pour mixture into a lined loaf pan and refrigerate for 3 hours to overnight. (It should remain stored in the fridge too as it will get too soft outside.) Cut and enjoy the treat! 


Be thankful for all the variety the Lord has allowed us to eat as food to sustain us!

Pumpkin Baked Oatmeal


Greetings Titus 2 sisters! 


Here I am sharing yet another pumpkin recipe. Hopefully these can be helpful especially if you have an abundance from a garden harvest that the Lord provided! (And also I'll have the recipes all in one place myself so I don't forget for next season if needed:-) 


Pumpkin Baked Oatmeal

2 cups oats 
2 tsps pumpkin spice
1 tsp baking powder
1/4 teaspoon salt
1 cup pumpkin puree
1 1/4 cup milk (any type) 
2 eggs
2 tsps vanilla
1/3 cup maple syrup or honey

Combine all in a bowl and then pour into a lined or greased baking dish. Bake in a 180C/350F oven for about 30-40 minutes.



Enjoy and be thankful for the great variety of food our good Lord provides us!

Pumpkin Hot Drink


Greetings sisters! 

Today I'm sharing yet another pumpkin recipe. I guess you could call this similar to a pumpkin chai or something but anyway whatever it is I'm sharing it.

Add a heaped tablespoon of pumpkin puree to a mug. 


As well as 1/2-1 teaspoon of pumpkin spice mix. 

(I make that myself with 1 Tbsp cinnamon and 1 tsp each of ground ginger, cloves, and nutmeg. Or make a larger batch if you like.)

Add sweetener (I am using a stevia sweetener tablet in the picture) and usual boiling water and some milk. You can add more pumpkin if you would like it thicker. 

There's so many things you can make with pumpkin...which is often paired with spices so the two seem to go together. 


I would make one for all of God's children around the world if I could:-)

Pumpkin Soup


Greetings fellow keepers of the home sisters! 


Today I'm sharing a simple pumpkin soup recipe. I kind of can't believe I haven't shared one before as it usually is the most often soup I make. Maybe I did share it within a post once but want to do a separate one here. 

I know soups are super easy to make and you may not need a recipe but wanted to share anyway. 

There's a few varieties I make so I'll share the simple one and then some varieties if you have a lot of pumpkin and want some variety in tastes. 


To make a big pot... 

2 large onions, sliced

half a large pumpkin, cubed (around 3kg)

Garlic (a few cloves chopped or a tsp of dry) 
 
salt to taste (tsp or so) 

(You can add a few potatoes too if you like.)

Add all to a pan. Add water or broth or stock to about three quarters the way up the vegetables in the pan and heat until everything is soft. (You don't have to cut everything fine as you will blend it at the end.) 


(I'm making the lentil and turmeric variety below.) 

You can first fry the onion (then add everything else) while you're chopping the pumpkin if you prefer. Fried onion does add a nice flavour but depends what you have the time or want to do I guess:-) 

Blend with a stick blender. 


Here are a few separate varieties I use which can be added to the basic version... 

1) add about one cup of dry red lentils and a few teaspoons of turmeric

2) add a few teaspoons of ground cumin and coriander

3) add coconut cream or milk at the end. You could add this to any of the varieties though. 

And of course you can add milk or sour cream or cream too. And serve with buttered toast or whatever!
