Pumpkin Fudge


Greetings sisters! 

Yes I'm back with yet another pumpkin recipe! This is a delicious and healthy fudge recipe. 

1/2 cup cooked pumpkin (pureed) 
1/2 cup coconut oil
1/2 cup cashew butter (or any nut butter) 
1/4 cup maple syrup
1 1/2 teaspoons pumpkin spice mix

In a small saucepan, combine all ingredients. Heat gently over low to medium heat, whisking continuously until just smooth (when the coconut oil is melted). Do not overheat. 

Pour mixture into a lined loaf pan and refrigerate for 3 hours to overnight. (It should remain stored in the fridge too as it will get too soft outside.) Cut and enjoy the treat!
