Three Ingredient Banana Oat Cookies

 


Hello Titus 2 sisters! 


Today I am sharing a really simple recipe which I appreciate! Good and healthy too. 

2 cups oats
2 large overripe bananas
1 Tblsp maple syrup or honey (optional) 

Mash or blend bananas until liquid. Mix all ingredients together. Drop on to lined baking sheets (or shape if mixture is dry enough) and bake in a 180C/350F oven for about 15 minutes until lightly golden.

Lemon Oat Muffins

 


Greetings sisters! 


Today I am sharing another healthy recipe and it would be especially good if you have lemons to use up. 


3 cups oats
1 1/4 cups milk
1/3 cup brown sugar
1/2 cup applesauce 
1 Tblsp lemon zest
1/4 cup lemon juice
2 eggs
1 tsp vanilla
1 tsp baking powder
1/2 tsp salt
1 cup frozen or fresh blueberries (I used chocolate chips instead in the ones in my picture:-). 

Combine all ingredients (except blueberries which mix in at the end) and bake in a preheated moderate oven (190C/375F) in muffin trays for about 25 minutes.

Pumpkin Muffins


Hello Titus 2 sisters! 

Here's another pumpkin recipe! Hopefully it's useful or at least I can not forget what I tried next season! 

1 ½ cups oats
1 ½ tsp pumpkin spice mix
1 tsp baking powder
½ tsp baking soda
½ tsp salt
2 eggs
1 cup pumpkin puree
½ cup brown sugar (or maple syrup, honey, or stevia etc)
¼ cup oil (any kind) 
¼ cup milk (or non-dairy milk) 
1 tsp vanilla extract

Blend oats to make flour in a food processor or blender (or use pre-made oat flour about 1 1/4 cups of it). In a bowl, mix together dry ingredients and then add the wet. Bake in muffin trays for about 25 minutes in a preheated moderate oven (180C/350F).

Pumpkin Fudge


Greetings sisters in Christ! 

Yes I'm back with yet another pumpkin recipe! This is a delicious and relatively healthy fudge recipe. 

1/2 cup cooked pumpkin (pureed) 
1/2 cup coconut oil
1/2 cup cashew butter (or any nut butter) 
1/4 cup maple syrup
1 1/2 teaspoons pumpkin spice mix

In a small saucepan, combine all ingredients. Heat gently over low to medium heat, whisking continuously until just smooth (when the coconut oil is melted). Do not overheat. 

Pour mixture into a lined pan and refrigerate for 3 hours to overnight. (It should remain stored in the fridge too as it will get too soft outside.) Cut and enjoy the treat! 


Let's be thankful for all the variety the Lord has allowed us to eat as food to sustain us!

Pumpkin Baked Oatmeal


Greetings Titus 2 sisters! 


Here I am sharing yet another pumpkin recipe. Hopefully these can be helpful especially if you have an abundance from a garden harvest that the Lord provided! (And also I'll have the recipes all in one place myself so I don't forget for next season if needed:-) 


Pumpkin Baked Oatmeal

2 cups oats 
2 tsps pumpkin spice
1 tsp baking powder
1/4 teaspoon salt
1 cup pumpkin puree
1 1/4 cup milk (any type) 
2 eggs
2 tsps vanilla
1/3 cup maple syrup or honey

Combine all in a bowl and then pour into a lined or greased baking dish. Bake in a 180C/350F oven for about 30-40 minutes.



Enjoy and be thankful for the great variety of food our good Lord provides us!

Pumpkin Hot Drink


Greetings sisters! 

Today I'm sharing yet another pumpkin recipe. I guess you could call this similar to a pumpkin chai or something but anyway whatever it is I'm sharing it.

Add a heaped tablespoon of pumpkin puree to a mug. 


As well as 1/2-1 teaspoon of pumpkin spice mix. 

(I make that myself with 1 Tbsp cinnamon and 1 tsp each of ground ginger, cloves, and nutmeg. Or make a larger batch if you like.)

Add sweetener (I am using a stevia sweetener tablet in the picture) and usual boiling water and some milk. You can add more pumpkin if you would like it thicker. 

There's so many things you can make with pumpkin...which is often paired with spices so the two seem to go together. 


I would make one for all of God's children around the world if I could:-)

Leftover Oatmeal Pancakes


Hello Titus 2 sisters! 


Here's a recipe for leftover oatmeal pancakes. Great for if you find yourself often having leftover oatmeal. 


2 cups leftover cooked oatmeal/porridge 

1 cup milk (any kind) 

1 cup oat flour

1 Tbsp baking powder

1/4 tsp salt

3 eggs


(If you want a sweet pancake add... 

¼ cup granular sweetener

1 tsp vanilla

*note...these seem to burn more easily though) 


Mix together and do what you do with pancakes:-) (You can blend the batter in a food processor for a short time if you like it smoother.) 


Give us day by day our daily bread.

Baked Oatmeal


Greetings Titus 2 sisters! 


Today I'm sharing a baked oatmeal recipe. It's one a sister had made when I was in her house so I asked for the recipe. Thank you sister:-) Good blessings from the Lord of daily food. 


Baked Oatmeal 

3 1/2 cups oats 
1 tsp baking powder
1 tsp salt 
1 tsp cinnamon (optional) 
2 cups milk 
2 eggs 
1 tsp vanilla 
1/2 cup melted butter 
1/2 cup brown sugar 

Mix together dry ingredients. Then wet ingredients separately. Combine all, and bake for about 20 minutes at 160C/375F.


I modified the recipe this time and made it with almond milk, butter substitute, and coconut sugar...just what was available and what I am asked to cook with. But it still works well and is really good! So you can modify it in such ways if needed.

Pumpkin Scones


Hello fellow Titus 2 sisters! 


Today I am sharing another pumpkin recipe...scones. Maybe some places call them biscuits but I'm sure you can tell by the pictures what they are. 


1 Tblsp butter (softened) 

1 cup sugar

1 egg

1 cup mashed pumpkin 

3 cup self-raising flour (or plain/all purpose flour with 6 tsp baking powder added) 


Beat together butter and sugar... 


Add egg and pumpkin and mix. Then add flour. 

Then roll out on a floured surface to about an inch thick. (It will be very sticky. Mine was at least. And that's good then they won't be too dry when cooked. You can add milk if it's too dry.) 


Cut out with whatever round cutter you can find...even a narrow glass will do. I used a five centimetre (2 inch) one. (I rolled my dough too flat perhaps but anyway they're still good and it doesn't matter really!) 



Bake in oven (210C/410F) for around 15 minutes. 



Enjoy with butter, or cream and jam! Or just plain.

Pumpkin Soup


Greetings fellow keepers of the home sisters! 


Today I'm sharing a simple pumpkin soup recipe. I kind of can't believe I haven't shared one before as it usually is the most often soup I make. Maybe I did share it within a post once but want to do a separate one here. 

I know soups are super easy to make and you may not need a recipe but wanted to share anyway. 

There's a few varieties I make so I'll share the simple one and then some varieties if you have a lot of pumpkin and want some variety in tastes. 


To make a big pot... 

2 large onions, sliced

half a large pumpkin, cubed (around 3kg)

Garlic (a few cloves chopped or a tsp of dry) 
 
salt to taste (tsp or so) 

(You can add a few potatoes too if you like.)

Add all to a pan. Add water or broth or stock to about three quarters the way up the vegetables in the pan and heat until everything is soft. (You don't have to cut everything fine as you will blend it at the end.) 


(I'm making the lentil and turmeric variety below.) 

You can first fry the onion (then add everything else) while you're chopping the pumpkin if you prefer. Fried onion does add a nice flavour but depends what you have the time or want to do I guess:-) 

Blend with a stick blender. 


Here are a few separate varieties I use which can be added to the basic version... 

1) add about one cup of dry red lentils and a few teaspoons of turmeric

2) add a few teaspoons of ground cumin and coriander

3) add coconut cream or milk at the end. You could add this to any of the varieties though. 

And of course you can add milk or sour cream or cream too. And serve with buttered toast or whatever!

Burrito Bowls


Greetings fellow Titus 2 sisters! 


Today I am sharing more of an idea than a set recipe. 


You cook rice and whatever kind of minced meat that you like (this is kangaroo:-). You can add things like some cumin, coriander, and paprika and garlic to the meat. 


And you can just add on top of the rice that you serve into bowls first any toppings that you like really (along with the cooked meat). 


Tomato 
Lettuce
Olives
Cucumber 
Capsicums/peppers 
Fried onion
Carrot 
Cheese
Sour cream or yoghurt
Avocado 
Beans

The combinations are many and you can just use whatever you have on hand really:-) 

Hope that can be a helpful idea to any of you godly women who cook for others.

Tomato Salad


Hello Titus 2 sisters, 


Here's another tomato salad recipe you may like to make (especially if you have a garden abundance!). 


It uses cherry tomatoes but honestly I'm sure any tomato chopped small would work fine. 


4 cups cherry tomatoes, halved 

1 cup pitted olives, chopped 

1/4 cup chopped parsley

2 garlic cloves, minced

Zest and juice of 1 lemon

Good dash of extra virgin olive oil

salt and black pepper




Combine all ingredients. 



Mix and serve and enjoy...being thankful for the Lord's blessings! (It's really good!)

Baked Coated Chicken

 


Greetings Titus 2 sisters! 


Today I am sharing a really good chicken recipe. It's very simple too. 


1/2 cup almond meal (or almond flour)

1 tsp paprika

1 tsp salt

1 tsp ground pepper

4 chicken thighs (or you can use similar pieces of chicken) 



Combine all ingredients (except chicken) in a resealable bag. (Or you could use a bowl if you prefer.) Make sure the meal and seasonings are well combined then add chicken one piece at a time and you can shake it around in the bag to make sure it's well coated. Or toss it around if you're using a bowl.  


Bake in a baking dish in a moderate oven (180C/350F) until chicken is cooked which could be around 45 minutes for thighs or longer for bigger pieces. 


Enjoy! It's super delicious:-)

Zucchini Pizza


Hello again Titus 2 sisters! 


Yes, I'm back again with another zucchini recipe! 


Base... 

3 cups zucchini, grated

3 eggs

1/3 cup flour

1/2 tsp salt


Toppings... 

2 cup cheese, grated 

2 tomatoes, diced

1/2 cup green capsicum/pepper

1/2 onion, finely chopped

1 tsp oregano

1 tsp basil

3 tblsp Parmesan cheese (optional)


You can use whatever toppings you like really:-) (I didn't use them all here either, just what I had.) 


Mix together base ingredients, and spread on a lined tray. Bake at 180C/350F until set and lightly golden (about 10 minutes). (I doubled the recipe here to make two pizzas.) 



Add toppings... 



Bake until cheese is melted.

Simple Tomato Pasta Sauce



Greetings fellow Titus 2 sisters! 


I'm just sharing what I threw together today to try to use up some more tomatoes. I'm sure there's more refined and sophisticated recipes out there. But we don't need to make things harder than they need to be do we sisters. 


20-30 tomatoes, roughly chopped

2 large onions, roughly chopped

6 garlic cloves, roughly chopped

Basil leaves, roughly chopped

Salt


Add all in a large saucepan and cook uncovered until everything is very soft and some of the liquid has evaporated. If you want this thicker, just simmer for longer. Blend with a stick blender and it is ready to use or freeze. 



I'm not sure what everyone calls this sauce but whatever you put in minced/ground beef for shepherds pie etc or pasta and such like.

Chickpea Tomato Salad


Hello Titus 2 sisters! 


Here's a simple yet delicious chickpea tomato salad. 


1 can chickpeas

3-5 tomatoes, chopped

1/2-1 tsp curry powder

2 tblsp olive oil

Salt

Balsamic vinegar (optional)

Basil (optional)


Mix all together, serve, and enjoy!

Quinoa with Vegetables


Hello Titus 2 sisters! 


Today I am sharing this recipe with you. 


1.5 cups quinoa, (cooked according to directions and salted) 

3 large onions, chopped

1 zucchini, sliced

2 cups cabbage, shredded

6 Roma (or handful of cherry) tomatoes, chopped

Basil leaves, chopped

(garlic powder, optional) 

Fry onions until golden. Add cabbage and zucchini and cook until soft. Add cooked quinioa, tomatoes, and basil and cook for a few minutes. 

Serve and thank the Lord for good healthy foods He provides!

Zucchini Boats


Greetings Titus 2 sisters! 


Here's yet another zucchini recipe! 


You can practically make the filling any way you like it as long as it's reasonably dry and not too wet. This one I made up for here but there's many different ways you can do it of course. 


5 small zucchinis

500g beef mince/ground (or whatever you like) 

1 large onion finely chopped 

4 garlic cloves 

Half red capsicum/pepper

5 tbsp tomato paste

Cheese, grated

Basil and salt (to taste) 


Slice the zucchinis lengthwise and scoop out the seed area. Place in a large baking dish. 

Keep the zucchini flesh aside and chop roughly. 

Fry onion till soft then add garlic, capsicum, zucchini flesh, and meat. Fry until the meat is cooked through. Add the tomato paste and basil. Let it simmer to thicken if it is too liquid. 

Fill the boats with the meat mixture and then top with grated cheese. 



Bake in a moderate oven for about half an hour or until zucchini is soft.
