Hello sisters!
I'm back with another recipe.
500g chicken (breast or thighs, or whole, cooked and shredded or cut into chunks)
1 onion, finely chopped
1 bay leaf
2 tsp mild curry powder
1 Tblsp tomato paste
1/2 cup stock
1 Tblsp lemon juice
¼ tsp brown sugar
200g mayonnaise
125g plain yoghurt
1 Tblsp dried apricots, finely chopped
salt & pepper to taste
Cook chicken however you like.
And set aside on a plate to cool.
Fry onion in the pan for a few minutes and then add curry powder and bay leaf and cook for another few minutes.Add tomato paste, stock, lemon juice, and sugar then simmer together until thickened.
Then allow to cool.
Mix together mayyonaise, yoghurt, and apricots in a large bowl where you will combine it all together at the end.(While you can put it together while it's still warm it just will make it runnier as it melts the mayyonaise and yoghurt which is what it did in my picture here.)
Mix it all together and serve with rice and vegetables or in sandwiches...or whatever! Good foods from the Lord to be thankful for!
